You already have the yogurt crudité version in the A-Z Recipe list. This time, though, we are going for a healthier dip-in recipe (if possible!). Although it is a VERY easy one, I wanted to share it with you in case you haven't made your mind up (and because it is monday and our weekly start of the week is eating healthier, am I right? ;-)
Ingredients (2 ppl.)
- 6 piquillo peppers
- 1 small clove of garlic
- 30 ml. of olive oil
- 1/2 cucumber
- 1 endive
- A pinch of salt
- Black pepper
Drain all the peppers on a paper towel and introduce them in the bowl of the mixer.
Peel and chop fine the garlic and add it together with the peppers. Mix and pour the olive oil while mixing.
Add the black pepper and the salt, and the cream will be done.
Now, peel and cut the cucumber into strips. Grab the endive and separate the leaves to make it easier to eat later.
And... Done! How fast can you make it ? ;-)
