It is perfect as a side dish for meat or even for appetizer before having lunch. You know in Spain we have the "aperitivo", a meal around 1pm based on a beer, vermut or glass of wine + patatas bravas, criquettas and you cheat the stomach before having lunch around 2-3pm (yes, we eat quite late compared to the rest of European countries!).
Ingredients (2 people)
- 1big cucumber
- black pepper
- 30 gr of sugar
- 200 gr of sour cream
Sour cream
- 200 gr of liquid cream
- 15 ml of lemon juice
- 10 ml of white vinegar
- a pinch of salt
Elaboration
Peel the cucumber and slice it. You can either use a mandolin (I want it one!) or a simple but a good sharp knife because the idea is cutting it into very thin slices. Put all the cucumber in a container, add salt and let it drain to remove the water. It will take 5 minutes.
Meanwhile, we'll make our sour cream. Pour the cream in a container. Note that the cream must be cold. Squeezze the lemon juice and add it to the cream. Now, beat it a little for some consistency.
Right away add the vinegar, the sugar and the black pepper and beat it for 4-5 minutes.
Don't worry if it isn't too whipped because my polish friend didn't care about it too however it will always be better looking ;)
(If you buy the sour cream already made the only thing you should do is the dressing: sugar + black pepper)
As a final step, drain the slices of cucumbers and mix them all with the cream.
Serve it cold and you have got this easy polish dish!
Something you have to know is that good nice polish meals are always served with original polish vodka. And we have some at home. Na zdrowie!
