Sweet chicken with lime :: Pollo dulce con lima
We always end up eating
either roasted or grilled chicken. Why not to try something different? There
you go, plus it's cheap! (Oh, and it's got garlic this time hehehe do you remember?)
Ingredients (4 px)
- 2 chicken breasts
- 2 limes
- 60 gr brown sugar
- 1
dl olive oil
- 2 cloves of garlic
- 4 cups of rice (=8 dl)
- 100 gr of onion
- 1 tablespoon of cinnamon
- salt
- dried apricots
- raisins
Elaboration
Make the juice of 2 limes.
Choose a container and pour it in. Add the cinnamon, the brown sugar and
the olive oil. Blend it (as you know I like crystal containers so I don’t use metal tools to avoid scratching).
Get the chicken breasts and
cut them into strips.
Now put the chicken into the container with the mixture and
marinate in cold for 1 hour.
After 1 hour, put the
chicken in a pan with its juice and keep five minutes over high heat. Then down
to low heat and let caramelize the chicken with the lime.
Grab a saucepan and boil
water to make the rice. NOTE: for each cup of rice, add 3 cups of water. When the
water is boiling, add the sweets onion, the garlic and the rice. Let the rice
cook. Once done stain it.
Get the pan where you made
the chicken and put the rice. Add the dried apricots, previously diced, and the
raisins. Cook everything together for 5 minutes over medium heat.
Done! And if you want to
make the chicken a little bit more glamorous dish, grab a glass, put the rice
in it, flip the glass and you get a different way of serving the rice with the
chicken.
