Squid casserole :: Calamares a la cazuela


This is one of the everyday recipes that my mom used to cook (and still does!) when we were kids. And we loved it despite it was fish-based which isn't the most favourite food when you are a kid.

My husband isn't into much fish either but I am the one that makes pressure on eating it at least 3 days per week. Yes, this is something that my doctor said it would be perfect for anybody's diet (specially if you are thinking about having babies ;-)

Ingredients (2 ppl)
  • 600 gr. of squid
  • 1 onion
  • 2 garlic cloves
  • 3 ripe tomatos
  • 30 ml. of white vinegar 
  • 2 bay leaves
  • 50 ml of olive oil
  • Salt
  • Pepper

Elaboration
Wash and clean the squid. I suggest buying fresh squid instead of froze one. I have tried the recipe with both options and if you use the frozen one you end up having a very dry fish after the dish is cooked. Cut into slices.
Peel and slice the glarlic cloves. Do the same with the onions and the tomatos.

Now, grab a shallow casserole and display the ingredients in layers: 1 layer of garlic, 1 layer of onion, 1 layer of tomato and 1 layer of squid. 
Repeat the same process until you finish with everything.

Water everything with olive ooil and vinegar. Add the bay leaves and the black pepper.
Finally the salt and put the casserole over high heat until it boils. Then, lower the heat and let it cook for 30'. After that time, add salt if necessary.

This dish tastes better overnight and you can leave it in the fridge up to 3 days.
