- 1 l plain flour
- 250 ml wholemeal flour & seeds *
- * linseed (or any other seed you have)
- 1 baking powder (5 gr aprox)
- 1 dl milk
- 5 dl water
- 30 ml honey
- salt
First af all, I have to tell you that I decided to make half of the recipe as we wanted the bread just for lunch.
Secondly: it's very VERY important put the right measures of the ingredients: not more not less.
Let's start: put the plane flour in the measuring cup. Then add the wholemeal flour and the linseeds (or any other seeds) up to 1,25 l everything all together.
Put the mixture in a big container and add the baking powder and the salt
Put the solid mixture aside and let's start with the liquid part. Use the same measuring cup and add the milk. Then, heat some of the water in the microwave for a few seconds and add it to the milk. Keep adding non heated water to the liquid mixture till it gets the body temperature (37oC) --> I don't have thermometer but you can try by adding some drops in the inner part of your arm and feel if it isn't too hot to bear it.
Once you get the temperature, add the honey and stir it all together.
Add the liquid part to the solid one and start mixing and stirring the ingredients up till you get compact dough. Work it with your hands, for at least 10 minutes, till you feel a smooth dough.
Make a ball and cover it with a cloth (Note: the cloth purpose is keeping the dough warm so I highly recommend you taking a big old clean towel and wrap it, container included). Leave the dough covered 1 hour and 20 minutes till the dough has doubled its size.
Divide the dough in as many parts as you feel like and lay them out in the baking tray. Cover the dough once again and leave it for 30 minutes more.
Now, you are ready to finish: just put the tray in the oven for 30-40 minutes at 200oC and you have got it!
