Zucchini pancackes :: Tortitas de calabacín

 A very quick daily recipe that you might instantly love!


Ingredients (4 units)



  • 1 zucchini 
  • 1 garlic clove 
  • 3 spoons of flour 
  • 2 eggs 
  • Parsley 
  • 1 yogurt 
  • 5ml olive oil 
  • 1/2 teaspoon of OREGANO
  •  1/2 teaspoon of SALT


Elaboration
Let's start with the boring duty of washing the zucchini carefully and getting rid of the extremes. Now, instead of cutting the zucchini into tiny pieces we are going to grate it. I always use the one from IKEA's. It works perfectly for this hard food (I also use it to make the carrot croquettes ;) 
Leave the grated zucchini in a bowl. Now wash and chop the parsley. Do the same with the garlic previously peeled. Add these two ingredients to the bowl with the zucchini.
Grab the eggs and beat them. Slowly, add the flour while stirring. It is important not to stop doing it until you get a thin little heavy dough. 
Add a pinch of salt and empty everything together in the container with the zucchini, parsley and garlic. Mix it all.





The key now is being slick enough to make cute rounded shape pancakes. Because I am not, I took a pan that helped me out to achieve the main goal hehe!. Mine is 10 cm of diameter. 
Heat the olive oil in the pan and add 2 spoons of the dough. Make the nice rounded shape and cook it for 2 minutes each side. Repeat the process with the remaining dough until is gone.


Now you have got your zucchini pancakes! However, if you want to add a hallmark of textures and temperature to your dish, you can make this easy and delicious yogurt sauce to go with the pancakes. Mix the yogurt with a teaspoon of olive oil, a pinch of salt and another teaspoon of oregano. 



Serve the pancakes hot with yogurt sauce apart and enjoy it !!
